Sample Recipe: Alkaline Minestrone
This is our basic soup recipe, and the yield will last for a few days. It can be slipped into the diet for lunch or dinner. It is hearty, nutritious, healthy and delicious. By all means, vary the vegetables with the season and top up the soup with water you have used to cook other vegetables. This soup will last two or three days, and, if you eat nothing else, it is a big step forward to an alkaline way of life.
4 cups water or organic
1 medium potato,
peeled and chopped
1 carrot, chopped
1 parsnip, chopped
1 turnip, chopped
1 celery stalk, chopped
⅓ cup diced green onions
⅔ cup fresh cream
Rock or sea salt
In a large saucepan, bring four cups of water or stock to a simmer. Add the chopped potato. Add the other vegetables to the pot. Boil for about 15 minutes or until the vegetables are soft.
Turn off the heat and pour carefully into a food processor or use an electric handheld blender. Add the cream and the rock or sea salt to taste. Blend into a puree and garnish.
